Making a dashi broth from scratch at home is a hassle for many people, but it’s not a pipe dream anymore if you have Kikka’s Sudachi Wafu Dashi Pack. Blended with carefully selected ingredients, including flying fish, nodoguro (black throat seaperch), sardines, mackerel, and sudachi citrus peel, it delivers a restaurant-quality dashi broth packed with umami and a refreshing kick. The sudachi used in this product is grown in the company’s home region of Tokushima Prefecture, and is produced from thinned fruit. By using the fruit that is ordinarily discarded, they contribute to sustainable farming. The whole sudachi is roasted and it creates a perfect harmony with the dried fish, as well as adding a subtle sweetness and toasty aroma. Sudachi Wafu Dashi Pack comes with 11 individual packets, each of which contains 8g (0.28 oz) of dashi powder, not granules. You can simply put the packet in water to extract its exquisite flavors. A single packet can make about 600 ml (2½ cups) of restaurant-quality dashi broth.

Put one dashi packet into 600ml (2½ cups) of water and bring it to a boil. Once it starts boiling, reduce the heat to medium, cook for 2-3 minutes, and then remove it from the heat. You can use the dashi for making miso soup, simmered dishes, zosui (Japanese risotto), chawanmushi (Japanese-style savory egg custard), or even drink it as is—it is flavorful enough to be enjoyed without any additional seasoning! When using it as a soup noodle base, it is recommended to make a richer broth—1 packet to 240ml (1 cup) of water is ideal. If you’d like to appreciate more of the sudachi flavor than the fish-based umami, we suggest making a slightly lighter broth. Also, if you rest the dashi in the fridge overnight, you’ll get a refreshing cold dashi broth with a more pronounced sudachi aroma. In addition, you can tear open the packet and use the dashi powder as a seasoning—mix it into dressings or sauces, or even rub it onto meat or fish before grilling or frying.

very tasty but huge salt content

I really love the flavor of this dashi and have used it many times already in making a variety of miso-based broths and soups.

However, when I looked at the ingredients, I found that it has 1,500 mg of salt in just one packet!

Being salt-conscious, I won't be buying it again, sadly.
