Wafu Dashi Tsuyu Sauce is a premium dashi-blended soy sauce made from seafood caught in the Japan Sea and Japanese soybeans. Taisho-ya, a soy sauce and miso specialty manufacturer in Shimane Prefecture, carefully selects their ingredients, including mackerel, horse mackerel, sardines, and kombu kelp, to brew and blend this aromatic and umami-rich sauce. It was originally developed for tsuyu (soup for noodles), only needing to be diluted with water, thus eliminating the burden of making dashi broth separately. However, the sauce can be employed in a variety of other ways as well. You can make sauce for tempura and donburi bowl dishes, or use it as seasoning for stir-fry, simmered dishes, and dressings. And, of course, you can use it as-is, just like soy sauce. With the fullness of umami harvested from both the surf and turf, Wafu Dashi Tsuyu Sauce can add a Japanese boost to your dishes.
Wafu Dashi Tsuyu Sauce has a concentrated flavor, so diluting with water is recommended when using it as a dipping sauce or soup for noodles. The best ratio for this use is one part sauce and three parts hot or cold water. Also, because the sauce is already blended with dashi, the need to make dashi broth separately is eliminated. This sauce can also be used as a seasoning for stir-fry or simmered dishes. For further variations, you can also mix it into salad dressings, marinades, and mayonnaise-based dips. And, of course, it’s good when used like soy sauce too.
