Shichimi togarashi, literally meaning “pepper of seven flavors”, is a versatile spice mix that has been enjoyed in Japan for centuries. Yoshida Furusato-mura’s Shichimi Togarashi is made with Orochi-no-Tsume (Claws of Orochi, a Japanese mythical serpent), a variety of chili pepper harvested in Yoshida Village in Shimane Prefecture, an area well-known for chili pepper production. It is blended with six other herbs and vegetables—sansho pepper, yuzu, sesame, carrots, shungiku greens, and burdock—also grown in Yoshida Village, in a special ratio developed by the company. Some of the ingredients are unusual for standard shichimi togarashi, but they are carefully chosen to match the sweet and umami-rich Orochi-no-Tsume pepper. Yoshida Furusato-mura’s Shichimi Togarashi exhibits a gentle spiciness that fades quickly and is followed by complex umami with hints of citrus and earthiness. It spices up various dishes such as steak, barbecue, pizza, pasta, udon noodles, hot pot dishes, and pickles.
