Saishikomi shoyu refers to a type of soy sauce that’s brewed twice, naturally exhibiting an intense, umami-rich flavor and distinct aroma. Kajita Shoten’s Premium Saishikomi (Four Year-Aged) Soy Sauce “Kajita Yasutsugu” is an exceptional quality example of this kind. It was born from the passion of Kajita Shoten’s 13th generation president, who wanted to brew a soy sauce that genuinely represented the tastes and natural environment of Ozu, their home in Ehime Prefecture. They first spend two years brewing and aging a robust soy sauce made using soybeans and barley grown by their local contract farmers. Then they spend another two years to brew it once more, with additional koji, and age it further to increase the concentration of amino acids, slowly and naturally. The result is a surprisingly rich and deep flavor with a clean aftertaste. Its luxurious taste can complement any cuisine, Japanese and non-Japanese alike, but it is particularly great with fatty, strong-flavored ingredients.

Soy Sauce with a touch

A sauce should have depth of flavor, smoothness of texture, and ease of compatibility. With a dap gleaming on my fingertip its rich smell excited my taste buds, and there was a subtle but satisfying deep flavor as it touched my tongue. Finally, with a couple of dashes on steaming Japanese rice was a graceful combination, the soy sauce did not over power but enhanced the flavor of the dish. It is now my favorite soy sauce!
