Containing bonito Ichiban-dashi (first brewing bonito dashi stock), the soup base was brewed with a secret method called "Hongaeshi", which entails melting sugar into soy sauce and mirin with heat and letting it sit at a low temperature. Mentsuyu is a noodle soup base made with koikuchi (dark) soy sauce and awase (kombu and bonito) dashi. This versatile liquid is typically used as an all-purpose noodle soup base, and can be used to infuse noodle dishes with authentic flavors. The most common use for Mentsuyu is as a dipping sauce for cold or hot noodles. Simply dip soba or udon into this Mentsuyu cold or warmed straight from the bottle, then add fresh toppings such as chopped scallions, shredded nori, wasabi, ginger and seafood to your noodles. This versatile noodle base can be used as a rich dipping sauce for tempura. If you want to create a hot noodle broth, simply add 1 part this noodle base to 2.5 parts hot water.
