This matcha pancake mix allows you to make pancakes with a robust matcha flavor, just by adding eggs and milk. Sencha-so, an esteemed tea manufacturer in Matsue City, Shimane Prefecture, carefully selects high quality, stone-milled matcha green tea from Uji in Kyoto, to produce this pancake mix. Because of Sencha-so’s extensive tea expertise, the matcha pancake mix is not merely a simple blend of matcha and pancake flour, instead, they have created the perfect formula that delivers matcha’s beautiful color, rich flavor, and wonderful aroma. This flour mix can also be used to make sweets like waffles, scones, doughnuts, and muffins. The package contains two 150g (5.3oz) bags, which together yield about 6 pancakes.
To make three matcha pancakes, mix one bag (150g / 5.3oz) of Matcha Pancake Mix with 1 egg and 120ml (½ cup) of milk until combined well. Pour the batter into a nonstick or lightly-greased frying pan and cook over a medium-high heat. Flip after three minutes and then cook for another two until the pancakes turns golden-brown. These pancakes are typically served with maple syrup, anko (sweet red bean paste) or kuromitsu (brown sugar syrup), but feel free to add whipped cream, jam, fresh fruits, or even chocolate sauce! You can make a matcha dorayaki (Japanese pancake sandwiches), too—cook two small pancakes (about 6 inches diameter), spread anko on one of them, and cover it with the other. This matcha pancake mix is also great for making waffles, scones, doughnuts, and muffins.
