Containing an abundance of guanylic acid—one of the umami’s components—dried shiitake mushrooms are a true umami booster. Japanese Dried Shiitake “Donko” Mushrooms—produced by Sugimoto that specializes in sustainably forest-grown, dried shiitake—are even richer in umami, sweeter, and firmer in texture than most mass-produced dried shiitake. This is largely owing to their careful production process. Sugimoto uses a 1000-year old Japanese approach to growing sustainable Sawtooth Oak tree logs in the deep forest of Takachiho-go in Kyushu that hosts the mushrooms and allows them to grow slowly in a clean, natural environment. Immediately after harvesting, the mushrooms are dried with hot air, and afterwards are further dried under infrared driers to ensure a lower moisture content and retain their flavor and aroma. The company also strives to maintain sustainability and traceability while keeping the highest quality. They have an exclusive agreement to work with 600 local independent mushroom growers who use authentic cultivation methods with no additives or pesticides.

The Donko shiitake variety is characterized by its round, meaty shape and firm texture with a rich umami and robust flavor. This product is Kosher certified.

Dried shiitake mushrooms can make a great vegan dashi broth that is perfect for ramen, soups, and simmered dishes while mushroom flesh is good for stir-fries and stews. To use, you must first rehydrate the mushrooms. Rinse them and soak them in warm water for one hour or cold water for 5-24 hours. This will give you a flavorful dashi base and earthy shiitake mushrooms! The dashi base can be frozen as ice cubes, that you can then use whenever you want. If you are in a rush, moisten the dried shiitake, cut them in to small pieces, and add them directly into soups or stews. This way you can rehydrate them faster and have the umami essence seep into your dishes. Store the product in a dark, cold place. After you open the package, make sure to reseal it tightly and refrigerate.
