Dorayaki is a traditional Japanese pancake sandwich filled with red bean paste, and is a wholesome snack that everyone will love. You can make this beloved snack at home if you have Owari’s Dorayaki (Japanese Red Bean Pancake) Mix. But not only that, the flour mix is exceptional because it’s blended with nutritious sake kasu (sake lees). Sake kasu is a non-alcoholic byproduct of making sake and contains an abundance of healthful nutrients such as protein, dietary fiber, vitamins, and minerals. It’s also rich in enzymes, which are produced through fermentation during the sake brewing process. In addition, sake kasu gives the flour mix a natural and delicate sweetness even though there is no added sugar. To make dorayaki pancake batter, just combine Dorayaki (Japanese Red Bean Pancake) Mix, eggs, mirin (optional), honey (optional), and milk. The flour mix can also be used for making cupcakes, scones, and muffins. Enjoy fluffy sweets with a nutritious boost!

To make authentic dorayaki, whisk 2 eggs, 4 tablespoons of honey, and 2 tablespoons of mirin together. Add 200 cc (7 fl. oz.) of milk and 1 package of Dorayaki (Japanese Red Bean Pancake) Mix, and incorporate all of the ingredients well, while preventing any lumps from forming. In a pan, heat some oil, and once the pan becomes hot, remove it from the stove and rest it on a wet towel for five seconds. Bring the pan back onto the heat, and then drop a scoop of pancake batter into it gently so that it naturally forms a 3-4 inch disc shape (if desired, a mold can be used to make a perfect circle). Once bubbles appear, it’s time to flip and cook it all the way through. Then layer red bean paste between two pancakes to make a sandwich. The pancake flour mix is slightly sweet even though there is no added sugar, so it’s great for making scones and biscuits. The flour mix makes wonderfully fluffy cupcakes and muffins as well.
