The farm, established by a former employee of a soy sauce company, developed this exquisite dressing in collaboration with local onion farmers in 2011. Grated onion is slowly sautéed until it releases its sweetness and is then mixed with tamari soy sauce. You can enjoy a mild and sweet flavor followed by a touch of spiciness from the onion. The texture is light yet it packs a lot of umami from both the onions and the soy sauce. Since its debut almost a decade ago, it has grown into one of the most appreciated craft dressings and is enjoyed both in Japan and overseas. The dressing is so versatile that you can use it for drizzling over salads or appetizers, seasoning sautéed, stir-fried or simmered dishes, and for marinating meat.
