Chili-Infused Sesame Oil (Rayu), 1.58 oz
Rayu refers to a chili oil often used in Japanese-style Chinese food. This artisanal rayu from Kuki, a century-old sesame product manufacturer, is crafted with their premium Pure Sesame Oil and chili peppers. The sesame oil used to make this rayu is processed with Kuki’s traditional methods without the use of chemical additives that accelerate extraction. In addition, they use only the first press, which is the most aromatic and flavorful. The freshly pressed premium sesame oil effectively extracts the aroma, umami, and spiciness from the chili peppers, allowing this rayu to exhibit an exquisite aroma, robust body and a crisp spiciness that lingers in your mouth. Adding even a modest amount of this rayu is guaranteed to elevate flavor to any dish. Enjoy its piquant and nutty kick with ramen, gyoza dumplings, soup, aemono (Japanese style, oil-free salad), and cold tofu as well as Sichuan cuisine.
It’s an oil with a powerful smell and taste, so even just a little of it will instantly enhance any dish. Enjoy its rich sesame aroma and sharp kick by adding it to a dipping sauce for gyoza dumplings, or Korean pancakes. Or you can drizzle it over ramen, dan dan noodles (ramen with spicy meat sauce), udon noodles, miso soup, hummus or cold tofu as an accent. Also, rayu and miso can amplify each other’s umami, so we recommend trying a Japanese-style sauce by stir-frying ground meat with miso then adding Kuki’s rayu right at the end. You can also use it as a replacement for sesame oil.
