Nukazuke (rice bran pickles) is one of Japan’s most beloved types of pickles and has been enjoyed for centuries. Nukadoko (rice bran bed), made from nuka (rice bran), salt, and water, is used as a pickling agent, which helps promote fermentation and enhances the nutritional components of the vegetables being pickled, such as vitamin B and plant-based lactic acid bacteria. However, making and keeping the nukadoko in good condition for fermentation is not so simple. This is where Kohsei Foods’ Nuka Paste comes into play. This ready-to-use, nuka paste in a tube allows you to make nukazuke easily without nukadoko. Place your choice of vegetables on plastic wrap, squeeze the paste over the vegetables, wrap everything up and with your fingers ensure that the vegetables have an even covering of paste. After pickling for hours in the fridge, remove the paste, rinse the vegetables, and cut or slice to serve. Nukazuke exhibits a slight sweetness and sourness, and brings out the umami from the pickled ingredient. It is a perfect side dish for rice, is good as a snack, and can be used as a garnish as well. You can also marinate fish or meat with it before grilling. Cheese and eggs are also great when pickled with nukazuke.

The basics of making nukazuke with Nuka Paste are simple—cover your choice of vegetables with it and refrigerate. You can pickle many different vegetables, such as cucumbers (cut both ends and pickle for 12 hours), grape tomatoes (remove the calyx, make a cross-cut and pickle for 24 hours), eggplants (remove calyx, cut in half length-wise and pickle for 24 hours), avocados (cut in half, remove pit and skin, and pickle for 12 hours), okra (flash boil and pickle for 12 hours), carrots (remove calyx and skin and pickle for 32 hours), and zucchini (cut off both ends, cut in half length-wise, and pickle for 32 hours). Nuka Paste can also be used for marinating fish fillets, chicken breast, and pork chops prior to grilling. Mozzarella and boiled quail eggs are good with Nuka Paste as well. Keep the product in the refrigerator after opening.
