Literally meaning dipping sauce for noodles, mentsuyu is a soy-based, umami-packed sauce enjoyed with Japanese noodles such as udon, soba, and somen. Made by a long-standing brewing company, Moribun, this Mentsuyu (Concentrated All-Purpose Noodle Soup Base) capitalizes on the umami from the company’s signature soy sauce and also from carefully selected ingredients, featuring bonito from Kagoshima, shiitake mushrooms from Ehime, kombu kelp from Hokkaido, and sardines from the Seto Inland Sea. When you use it as a dipping sauce for noodles, it’s best to dilute it one-to-one with water, but you can adjust its flavor intensity by changing this ratio to taste. It can also be used for Japanese soup noodles, tempura dipping sauces, nabe hot pots, simmered dishes, and donburi bowls. Its sweet and savory flavor is great for spicing up dressings, marinades, and even beef steaks and hamburgers as well.

Moribun’s Mentsuyu (Concentrated All-Purpose Noodle Soup Base) is developed to be used as a noodle dipping sauce by diluting it one-to-one in water, but you can adjust the ratio to taste and enjoy it with a variety of dishes. It’s suggested to dilute one part Mentsuyu in three parts water when used for soup noodles. For tempura dipping sauce, a one-to-two ratio is recommended. Also, you can use it as a seasoning sauce and add it into nabe hot pots, simmered and sautéed dishes, as well as salad dressings and marinades. Staple Japanese dishes like nikujaga (thinly sliced pork or beef simmered with potatoes and vegetables) and oden (assorted fishcakes, fish, meat, and vegetables simmered in a hot pot) are easy to prepare if you have Mentsuyu. Its sweet, savory, and umami-rich flavor goes very well with Western food like beef steaks and hamburgers. Store it in a dark place at a room temperature before use and keep refrigerated once opened.

Moribun Mentsuyu, somewhat magic

Moribun mentsuyu soup base is indeed a very good product. Diluted by 50% it makes an excellent noodle dipping sauce. Undiluted the sauce has plenty of smokey umami that can be used in a variety of applications, from soups stocks to concentrated dressing for fish, poultry or vegetables. We find it a great product, and will keep it in our pantry to use for exploring/inventing new dishes and dressings. Recommended.

Perfect Addition to Our Pantry!

Loved the Moribun mentsuyu noodle soup base! It was the perfect choice for us to use in our simple soba noodle soup recipe and it made for a very quick, delicious dinner. Ordering from Umami Insider was also a seamless process. The bottles arrived quickly and they were padded very well, packaging was very thorough.
