What is Tebasaki?
In Japan, people call chicken wings tebasaki. They are very popular in the Nagoya region, located in the center of the country, and has absorbed many different cultures. Nagoya’s tebasaki is similar to America’s teriyaki style chicken wings – they are fried chicken wings dipped in savory Japanese teriyaki sauce and covered in sesame seeds.
Back in the day, chicken wings were used to make chicken stocks for the soup at a restaurant called Furaibou in Nagoya. It changed when they forgot to order whole chicken for their special menu one day. The chefs usually discard chicken wings after making chicken stocks. On that day, they fried and dipped chicken wings in their special sauce and serve instead as the special menu. That was how Nagoya style tebasaki was born! Our easy to follow recipe and video is not the exact original Nagoya style. Still, it is an authentic Japanese recipe that is popular among households all over Japan when cooking tebasaki at home.
What is Ajitsuke Tamago?
You often see ajitsuke tamago in ramen as an easy and delicious way to add protein to the meal. Unlike in the west, where it’s common to eat chicken wings alone, it’s more common to eat a whole balanced meal in Japan than to eat chicken alone. For this reason, people cook eggs with their chicken wings, and it becomes a complete dish. Other popular ingredients added to chicken include daikon radish and other root vegetables. They give the plate more flavor and make it healthier.

Japanese Chicken Wings
- 1.5 lb Chicken Wings
- 4 Egg boiled
- 3 ½ Tbsp Organic Rice Vinegar
- 3 ½ Tbsp Soy Sauce
- 2 Tbsp Sugar
- 1 clove Garlic
- 1 tsp Ginger grated
- ½ cup Water
- Mix together the seasoning ingredients in a bowl.
- Place chicken wings and boiled eggs in a pot and add seasoning mixture.
- Turn the heat on and bring to boil. Stir occasionally.
- Once boiled, turn down the heat to low and simmer until chicken wings are tender.
